Salsa Recipes>Cranberry Ginger Salsa RecipeIngredients: 1-3/4 cups cranberries 1/3 cup raisins 1/4 cup sugar 1/4 cup pineapple juice 2 tbl. chopped candied ginger 1/2 tsp. grated orange peel 1/3 cup crushed pineapple Directions: In a saucepan, combine cranberries, raisins, sugar, pineapple juice, ginger and orange peel. Bring to a boil and simmer for about 5 minutes, or until the cranberry skins begin to pop, stirring after 3 minutes. Add pineapple; mix well. Set aside to cool.
