Ingredients:
2/3 cup chopped ripe tomato
1/3 cup chopped honeydew melon
1/3 cup chopped fresh pineapple or
8 oz. can crushed pineapple, drained
1 tbl. finely chopped fresh cilantro
3 tbl. fresh lime juice
1 tsp. olive oil
1/4 tsp. salt
Directions:
In a small bowl, combine all ingredients; mix well. Cover with plastic wrap; let stand at room temperature 15 minutes. Serve as a relish for grilled fish or meat. Makes 1-1/4 cups
