Ingredients:
2 sticks (8 oz) butter, softened
1 cup Splenda
5 eggs
1 cup almond flour
1 cup Apple-Cinnamon Soy Pro
1 tsp vanilla extract
1 tsp cinnamon
Directions:
Apple-Cinnamon Soy Pro is available from The Low Carb Connoisseur.
Preheat oven to 350°F. Oil 2 muffin tins, or use paper liners with a quick spray of Pam.
Mix all dry ingredients in a small bowl. Mix all liquid ingredients in large bowl; then add dry ingredients and mix with hand mixer for one minute. Pour into muffin tins and bake for 15-20 minutes (watch carefully - ovens vary!)
Makes 12 muffins
