Ingredients:
1/4 cup whey protein Isolate, french vanilla
1/4 cup soy flour
1/2 cup wheat bran
1/2 tsp xanthan gum (or guar gum)
1/4 tsp baking soda
1/4 tsp ginger
1/4 tsp clove
1/4 tsp mace
1 tbl cinnamon
1 dash salt
1/4 cup Splenda
1/4 cup Brown Sugar Twin
1 egg, beaten
1/4 cup water
3 tbl butter, melted
2 tbl heavy cream
1/4 cup chopped pecans
Directions:
Mix together first 12 ingredients in a bowl and set aside.
In a separate bowl, whisk together next 4 ingredients. Combine the wet and dry ingredients and mix well. Add chopped pecans and mix again. Drop by teaspoonfuls on cookie sheet and bake at350°F-180°C for 8 - 12 minutes.
Makes 20-24 cookies - a little less than 1 carb per cookie.
