Ingredients:
2 cups carrots, grated or shredded
1/2 cup raisins (light or dark)
1/3 cup mayonnaise
Lettuce
Directions:
Peel carrots with a vegetable peeler and grate coarsely or shred. Add the raisins and mayonnaise. Stir thoroughly to mix. Place a lettuce leaf on each of 4 salad plates. Spoon carrot salad into center of each leaf.
