Breakfast Recipes>Baked Mushroom Omelette Recipe


Ingredients:
Mix it all together and bake!
2 eggs (or 4 eggwhites)
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
250 g low-fat ricotta cheese
1 tomato, chopped
1 small onion, peeled and chopped
6 mushrooms, sliced


Directions:
Mix together eggs, cheese, basil & oregano.
Add tomato, onion and mushrooms.
Spoon mixture into buttered baking dish.
Bake at 180 degrees celcius for 25 minutes.
